Whole Wheat Maple Syrup Hamantaschen's
w/ blueberry poppy jam
If you like maple syrup these are so flavorful! Hamantaschen's are a Jewish treat made by the dozen once the month of Adar begins! Everyone loves them & they just remind us of the celebration of Purim & all its joy.

Ingredients:
2 cups Whole Wheat Flour
½ cup Maple Syrup
½ cup Vegan Butter, mostly melted
1 tsp. Baking Powder
Blueberry Poppy Jam:
1 cup Blueberries
1 tsp. Pomegranate Syrup (or can use date syrup instead or even suagr)
½ tsp Poppy Seeds
¼ cup Water
1 tsp. Arrowroot powder
Directions:
Preheat oven to 350 degrees.
Next, start by make the jam. In a pan add blueberries & syrup or sugar.
Cook on medium low heat for about 5 minutes.
In a measuring cup add water & stir in the arrowroot. Make sure to stir the arrowroot powder fully into the water before pouring it into the pan.
Once the jam starts to thicken turn off the heat (about 5 minutes). Then, add in the poppy seeds. Turn off the heat & allow to cool
In a mixing bowl add whole wheat flour & baking powder, Give it a mix.
Then, add in vegan butter & maple syrup.
At this point start mixing with your hands, it's way easier!
Once the dough has formed separate it into two. Place one aside & work it in two batches.
Using a rolling pin, roll the dough out about a quarter inch thick.
I used a jar to cut circles but if you have a cookie cutter use that. Cut out all the circles & place a tsp of jam in the center. Then, pinch the dough into three points around the jam to shape it into hamantaschen.
Repeat & line on a baking sheet. Bake in the oven for about 15 minutes!
