Spicy Ginger Sticky Tofu

Spicy Ginger Sticky Tofu w/ Shishito Peppers & Cauliflower Rice



Sticky tofu is probably #1 in my top most drooled over food photos! I have seen a bunch of people make it & I had yet to make it! I was always intimidated by the process but now I realize how fast of a dinner option it is.

This recipe took about half an hour at most. In these quarantine days it was nice to eat something comforting but also remembered me one of my favorite restaurant, Spicy Moon!


This recipe was the perfect amount for three people! You can also use regular rice instead of cauliflower rice & also adjust the spicy levels according to your own taste buds!



Spicy Ginger Sticky Tofu

w/ Shishito Peppers & Cauliflower Rice

 

Ingredients:

1 Package of Extra Firm Tofu


Sticky Sauce:

1 Cup Water

½ Cup Soy Sauce

1 Tbsp Ginger, minced

1 Tbsp Garlic, minced

1 tsp Jalapeno, minced

1 tsp Potato Starch

Optional: 1 tsp Sriracha


For frying the Tofu:

¾ Cup Potato Starch

¼ Cup Avocado Oil


Shishito Peppers:

8 oz. Shishito Peppers ½ Tbsp Avocado Oil

2 Cloves of Garlic, minced 1 tsp Maple Syrup

1 tsp Soy Sauce

½ the juice of a Lemon

⅛ tsp Black Pepper

⅛ tsp Salt

Optional: Sprinkle Red Pepper Flakes on top.


Cauliflower Rice

10 oz. Cauliflower Rice bag

1 Small Onion, minced

⅛ tsp Black Pepper

⅛ tsp Salt


Directions:

  1. First, drain the tofu & cut in half vertically in two.

  2. (Optional but I like to press the tofu. It helps to drain some of the liquid from the tofu & lets the sauce itself soak in. It also makes the tofu more firm.) Place the tofu in between two dish towels & place something heavy on top to press the tofu. Press the tofu for about 20 minutes.

  3. While the tofu is being pressed place all the ingredients for the sticky sauce into a medium bowl. Whisk together well & make sure all the starch is dissolved.

  4. Take the tofu & cut them into about 1-inch cubes, Place the tofu in the sauce & let sit for about 15 minutes.

  5. Once you have lightly marinaded the tofu it's time to lightly fry!

  6. In a medium, pan add a little avocado oil. Let the oil heat up & then fully coat the tofu pieces in the potato starch. Place the tofu going clockwise around the pan creating a spiral. Cook the tofu on each side, until golden brown.

  7. Once it is nicely brown pour in the sauce & toss the tofu in the sauce to fully coat the tofu. The sauce will start to become golden & sticky!


Shishito Peppers:

  1. Preheat the oven to 370° degrees.

  2. Layout the shishito peppers on a baking tray & toss them with the ingredients. Bake for about 10 mins.


Cauliflower Rice:

  1. Mince the onion & place in a pan with a little oil. Saute until translucent & add in the cauliflower rice, salt & pepper. Stir frequently & cook until rice is hot.

  2. You can serve each ingredient separately or place the cauliflower rice in a bowl with the shishito on the edge of the bowl. Pour the tofu on top of the rice & it is ready to go!
