Persian Love Muffins
w/ rose & orange zest frosting
The ingredients in these love muffins scream I WANT ROMANCE! Rosewater, cardamom, cinnamon, & sugar! Even pistachios are expensive & can make a person feel special!
These muffins were made in honor of the Jewish holiday, Purim but I found it fitting that I share it on Valentines day. Purim is a story of hate & I made these love muffins to show that love always wins!
We must all learn to love each other. No person is more deserving then the next to live life. Once we learn to respect, to understand each other & truly love unconditionally then can we all live in unity! 💜
Ingredients:
Muffins:
1 cup Almond Flour
1 cup Oat Flour
¾ cup Oat Milk
⅓ cup Apple Sauce
⅓ cup Maple Syrup
½ Zest of an Orange
1 tbsp Corn Starch
1 tbsp Apple Cider Vinegar
1 tbsp Rosewater
1 tsp Baking Powder
1 tsp Baking Soda
½ tsp Cardamom Powder
¼ tsp Cinnamon
¼ tsp Nutmeg
Pinch of Salt
Frosting:
½ cup Powdered Sugar
¼ cup Macadamia Oil (or use another oil like olive or even butter.)
1 tbsp Rose Water
½ Zest of an Orange
Garnish: 12 crushed Pistachios & a few Dried Rose Petals
Instructions:
Preheat the over to 350 degrees°
In a large bowl mix the dry ingredients; almond flour, oat flour, corn starch, baking powder, baking soda, cinnamon, cardamom, nutmeg, & salt.
In another small bowl add in the wet ingredients; oat milk, apple sauce, maple syrup, apple cider vinegar & mix together well.
Add the wet ingredients to the dry & mix together well.
In a cupcake pan (I used a 6 cupcake pan but these make about 9) add about a little more than an ice cream scoops worth into each cupcake hole.
Bake for 35 minutes.
In the meantime, mix together the ingredients for the frosting.
Once the muffins are done allow them to cool before applying the frosting.
After they have cooled down, dip the top of the muffins into the frosting & garnish by sprinkling some pistachios & rose pedals.
